    Rinse the rice under cold water until the water runs clear. Cook with 2 cups water in a rice cooker or covered pot.

    While rice cooks, heat rice vinegar, sugar, and salt in a small pan until dissolved. Let cool.

    Spread hot rice in a large bowl. Drizzle with vinegar mixture and gently fold to combine while fanning to cool.

    Place a nori sheet on a bamboo mat, shiny side down. Spread rice over the nori, leaving a border at the top.

    Add fish, cucumber, and avocado in a line across the center. Roll tightly using the mat.

    Cut each roll into 6-8 pieces with a wet knife. Serve with soy sauce, wasabi, and pickled ginger.
