Ingredients
- 1 lb spaghetti
- 8 oz bacon (diced)
- 4 egg yolks
- 2 whole eggs
- 1 cup Parmesan cheese (grated)
- 1/2 cup Pecorino cheese (grated)
- black pepper
- salt
Instructions

1Boil a large pot of salted water. Cook spaghetti until al dente, saving 1 cup of pasta water before draining.

2While pasta cooks, fry bacon in a large pan over medium heat until crispy. Remove pan from heat.

3Whisk egg yolks, whole eggs, and most of the cheese together in a bowl. Add plenty of black pepper.

4Add hot pasta to the bacon pan (off heat) and toss to coat in the bacon fat.

5Pour egg mixture over pasta and toss quickly, adding pasta water as needed until creamy. Serve with remaining cheese.
