Ingredients
- 6 cups mixed greens
- 1 cup cooked quinoa or grains
- 1 cup cherry tomatoes (halved)
- 1 cucumber (diced)
- 1/4 red onion (sliced)
- 1/2 cup feta cheese (crumbled)
- 1/4 cup olives
- 3 tbsp olive oil
- 1 tbsp red wine vinegar
- 1/2 tsp dried oregano
- salt and pepper
Instructions

1Cook quinoa or grains according to package directions if not already prepared. Let cool.

2Whisk olive oil, vinegar, oregano, salt, and pepper together for the dressing.

3Divide greens between bowls. Top with grains, tomatoes, cucumber, onion, feta, and olives.

4Drizzle with dressing and toss. Add grilled chicken or chickpeas for extra protein if desired.
