Hot Honey Sweet Potato Beef Bowls
Roasted sweet potatoes, taco-seasoned beef, cool cottage cheese, and avocado, finished with a little hot honey.
Serves 4 · About 40 minutes

What you’ll need
- 1 lb ground beef
- 2 medium sweet potatoes (about 1 lb total), peeled and cut into ½-inch cubes
- 2 tbsp olive oil
- ½ tsp salt, plus more to taste
- ¼ tsp black pepper
- 1–2 tbsp taco seasoning, to taste
- ¼ cup water
- 1½ cups cottage cheese
- 2 avocados, sliced
- 2 tbsp hot honey, or to taste
- 1 lime, cut into wedges
- ¼ cup chopped cilantro, optional
Let’s make it
- Heat the oven to 425°F. Toss the sweet potato cubes with olive oil, salt, and pepper. Spread them in a single layer on a large sheet pan.
- Roast for 25–30 minutes, turning after about 15 minutes, until the centers are tender and the edges have browned.
- While the potatoes roast, cook the ground beef in a skillet over medium-high heat, breaking it into small pieces. Cook until the beef reaches 160°F, then carefully drain excess fat.
- Stir in 1 tablespoon of taco seasoning and ¼ cup water. Simmer for 2–3 minutes. Taste the cooked beef and add more seasoning if wanted; blends vary in salt and heat.
- Divide the sweet potatoes and beef between four bowls. Add ⅜ cup cottage cheese and half an avocado to each bowl.
- Drizzle each bowl with about ½ tablespoon hot honey. Finish with lime and optional cilantro. Serve while the beef and potatoes are hot and the cottage cheese is cool.
